Erythorbic Acid FCC

Erythorbic Acid FCC is a white or slightly yellow crystal, which, on exposure to light gradually darkens. In the dry state it is reasonably stable in air, but in solution it rapidly deteriorates in the presence of air. It melts between 164-171° C. One gram is soluble in about 2.5 mL of water and in about 20 mL of alcohol. It is slightly soluble in glycerine. It is most commonly used as a preservative and an antioxidant in food products.
