Glucono Delta Lactone

Glucono Delta Lactone (GDL) is a natural food acid that comprises a carbohydrate with a lactone formation. GDL is found in honey, fruit juice, wine, and fermented products. GDL is metabolized to glucose and one gram of GDL is equivalent to one gram of sugar. It contributes to the tangy flavor of foods, lowers pH, and helps preserve food from deterioration. In food processing, GDL is used as a curing and pickling agent, a leavening agent, a pH control agent, and a sequestrant. Common applications of GDL include: bakery products, cheese/tofu, dairy/milk, fish/seafood, fruit & vegetables, meat, pasta/rice, and salad dressings/sauces.
