Amaranth is a seed, but much like Quinoa, is considered a grain in cooking. Amaranth is gluten-free, a source of complete protein, high in fiber, and a good source of iron. Amaranth can be used as the “grain” portion of a meal; a highly nutritious substitute for rice. Or use whole amaranth as a risotto or oatmeal. You can substitute a portion of flour in baking with amaranth flour for gluten-free baked goods. Add to smoothies or soup for added texture or as a thickening agent.
