Maraschino Cherries (Without Stems)

Maraschino Cherries (Without Stems) are maraschino cherries that begin as Royal Ann or Gold varieties. The fresh cherries are soaked in a salt solution to remove their natural coloring and flavor, then pitted and soaked in a container of sweetener for approximately 30 days. Finally, they are dipped in an artificial coloring—the signature bright red or occasionally green, bordeaux or black.
